Herbed Squid Salad
INGREDIENTS
100 gms cleaned squid
80 gms cucumber, cut into batons
50 gms green olives
100 gms slow roasted tomatoes
sprigs of chervil, dill & watercress in equal quantity 
100 gms corn flour
30 mls chardonnay vinegar
50 mls olive oil
Salt & Pepper

METHOD
Cut squid into small triangles.  Mix salt, pepper and corn flour together and liberally dust the squid.  Heat cooking oil in a pan and bring to medium heat.  Fry squid until just cooked (3-4 mins). Place all other ingredients on the serving plate.  Dress with oil and vinegar and adjust seasoning. Place squid on top of the salad and serve immediately.
