The consistent quality of the meat offered is substantially due to the fact that the restaurateur John Kilroy is a nationally recognised beef judge. He is constantly showcasing beef to the hospitality industry where discussions range from the breed of cattle, feed type and age of the carcass. John sources the beef direct from producers and suppliers and ages it for five weeks, giving diners a chance to taste different breeds, brands and regions. There are many variables to take into account to put a good steak on the plate!
And now Char also incorporates Jellyfish! John's wildly successful foray into seafood that was put on a temporary hiatus due the Brisbane floods in January 2011. Whilst the rebuild is underway, Jellyfish chefs have been dispatched to the top end to do what Jellyfish does best: 'beautiful fresh fish served simply.' Darwin's response to the Jellyfish menu is undeniable, you love it! And thus, we're continuing it.
